Carob Blondies

  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/2 package Melissa's Carob Pods finely ground
  • 1/2 cup chopped cashews
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter
  • 1 cup Granulated Sugar
  • 2 Eggs
  • 1 teaspoon pure vanilla extract


  • Preheat the oven to 350ºF.
  • Grease a brownie pan and set aside.
  • Place all of the dry ingredients, except for the sugar, in a bowl and whisk to combine. Set aside.
  • Cream together the butter and sugar in a standing mixer until light and fluffy. Add the eggs, one at a time, and add the vanilla. Mix until well combined. Slowly add the dry mixture and mix until just combined.
  • Pour the mixture into the prepared brownie pan and level it with a spatula or wooden spoon. Place in the preheated oven and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean. Set aside to cool; then cut into 16 pieces.
