Beer-Steamed Smashed Bacon Cheddar Potatoes
Whether you’re hosting the whole neighborhood or tailgating at the stadium, these Smashed Cheddar Potatoes are the perfect pairing for any get together. Game day is all about salty snacks and cold beer… why not have both with these beer steamed smashed potatoes?
Beer-Steamed Smashed Bacon Cheddar Potatoes
Ingredients:
- 3lbs Melissa’s ProduceBaby Dutch Yellow Potatoes
- 6 strips of bacon
- 1 bottle of beer (your choice)
- ½ cup of sour cream
- Juice of ½ a lime
- 1 cup of shredded Colby jack cheese
- Olive oil
- Salt and pepper
- ¼ cup to ½ cup of diced green onion / chives
Directions:
- Preheat your grill to 325 degrees
- Make a tin foil pack add 6-8 potatoes
- Drizzle olive oil on the potatoes as well as salt & pepper over them
- Add a ½ cup of beer to the pouch and steam for 25-35 minutes
- Take a cast iron skillet place it directly on the grill and cook your bacon until crispy
- Remove the bacon put keep the bacon fat in the skillet
- Smash your potatoes half way with the flat end of a knife and crisp them up in the bacon fat
- Chop up your bacon and green onions/ chives and top your potatoes
- Take your shredded cheese and top your potatoes with them
- Place back in your grill until the cheese is melted
Calypso Kick Sour Cream:
- Add half cup of sour cream to bowl
- Add 2 tablespoons of Caribeque Calypso Kickseasoning and the juice of a ½ a lime
- Mix well
Remove your potatoes from the grill place on a serving plater
Top with the sour cream mixture and enjoy!
