How to Make Fresh Noodles with Bok Choy

Chef Martin Yan shows us how to cook with Bok Choy for Chinese New Year. Did you know, Bok Choy symbolizes prosperity? Certain dishes are eaten during the Chinese New Year for their symbolic meaning. Lucky food is served during the 16-day festival season, especially New Year’s Eve, which is believed to bring good luck for the coming year. The auspicious symbolism of these foods is based on their pronunciations or appearance.

How to Make Fresh Noodles with Bok Choy
Recipe: Fresh Noodles with Bok Choy

Ingredients
1 package Noodles
2 tablespoons Hoisin Sauce
2 tablespoons Soy Sauce
2 teaspoon Sugar
2 teaspoons Sesame Oil
2 tablespoons Ginger Root minced
2 heads Bok Choy (use Baby Bok Choy) cut lengthwise into 8 segments
2 Organic Green Onions cut into 2 inch long strips
Directions
Cook the noodles in a large pot of boiling water according to the package directions.
Prepare the seasonings; stir the hoisin sauce, soy sauce, sugar, and sesame seed oil together in a small bowl.
Add the bok choy, and ginger stir-fry until tender, about 2 minutes. Add the noodles, green onions, and seasonings and toss gently until heated through.
